WICKED FIVE SAUCES

Instructions
  1. Roast Habanero peppers, Jalapeño peppers, and Serrano peppers on the char grill until the skin is blistered and ¾ black on all sides off the peppers.
  2. Soak Scorpion Peppers in 3 cups of very hot water 190 degrees in a 4 Quart clear cambro with a plate on top to push peppers in water for 30 minutes, seal the cambro with clear wrap.
  3. After peppers are blistered black and scorpion peppers are soft using blender mix all ingredients.
  4. Shelf Life: 14 DAYS

SUICIDAL SAUCE

Instructions
  1. Bring all ingredients and equipment listed above to one work station
  2. In a stock pot add 3 gallons of water and bring to a boil on high heat
  3. Add Habanero peppers and cook for approximately 5 minutes, cook till peppers are tender
  4. Remove pot from heat and drain into prep sink.
  5. Place the cooked peppers into blender; add 2 cups of extra hot sauce
  6. Blend on high until thoroughly mixed
  7. In a mixing bowl place the rest of extra hot sauce and the blended Habanero peppers.
  8. Using a wire whisk stir until smooth
  9. Transfer to proper size container and label
  10. Critical Points:
  11. Be careful when draining peppers, the steam can cause severe burns
  12. Be sure kitchen hoods are turned on
